Meredith made a chicken salad out of Romesco Sauce/Dip[@rev] and Costco Rotisserie Chicken Breast. She used mostly greek yogurt with a little bit of mayo. She also added slivered almonds for some crunch (though it didn't really need it with the cucumber).
We liked it and would have it again!
